說起家裡這口慢鍋,其實是去年打算跟一家之主兩個人自己給自己坐月子的工具,想說每天睡前一鍋補,隔天早上起來正好開始吃一天,如意算盤打得很好,但卻沒想到小餅提早出生我緊急剖腹,還有老爺意外地在小餅出生時得「皮蛇」,被醫生勒令一個月不准接近小餅的意外狀況。我們產前請的 doula (陪產員) Annette 曾用慢鍋煮了好香的 Sausage Tortellini Soup,讓我們在出院回家的第一星期感受到好大好大的溫暖。不過娘親趕到後接管廚房,嫌慢鍋佔位子,於是體積龐大的慢鍋就被移到廚房窗邊角落看風景,直到幾個月後雙方長輩都離開了,才得以重回原位。後來喜歡上慢鍋做菜,是因為慢鍋把我在廚房的時間大為減少,免掉小餅不少站在安全欄杆外亂跳亂叫猛抗議的場面。幾星期下來,發現用來燉排骨湯,湯汁濃郁,排骨的軟骨化為滴滴答答的膠質,倍增入口好滋味;燉韓式厚塊牛小排,肉爛而不澀,又骨肉分離;用來煲干貝鮑魚雞湯,鮮美得感覺好幸福。於是我更勤快地收集慢鍋食譜,也更愛翻閱近來很適合在還不太懂得善待書頁的小餅身邊放心享受的 Good Housekeeping,也因此才找到了今年感恩節主菜之一。

兩年多前寫過一篇Boneless Chuck Pot Roast,自此就不論作蔬菜燉牛肉、羅宋湯,或者中式牛肉麵,都選用這個部位的牛肉,原因無他,因為我不愛太瘦太澀的牛肉,更愛一點點肥滋滋的油,偏偏 超市賣的牛腩都瘦巴巴的,以前在紐約上州還買得到肥油花紋比較密布的tip cut (某個紐約上州連鎖超市還有種很神奇帶筋的牛肉部位叫chicken steak),在這兒卻清一色是flat cut,懶得跑正港butcher's shop的人就要自行另尋出路。這次在十月號 Good Housekeeping 看到的 chuck pot roast 食譜特別處在於加了 ginger snap cookies,紅酒與紅酒醋的效果也讓人嚐了之後真的要大讚肉香蔬菜甜呀。不過 下次再作這道菜時,我會先把牛肉表面煎過,這樣可以省去頭一小時用High烹調的手續,也要把酒醋的量再增加兩匙左右,才更能突顯"tangy"的味道。

Sweet and Tangy Braised Chuck Roast

Yields: 6 main-dish servings
Prep Time: 10 minutes
Cook Time: About 8 hours on low or 6 hours on high


INGREDIENTS:

6 (2-inch) gingersnap cookies, finely crushed into crumbs
2 cups (about half 16-ounce bag) peeled baby carrots
2 large stalks celery, cut crosswise into 2-inch pieces
1 medium onion, cut into 1-inch pieces
1 cup dry red wine
2 tablespoons red wine vinegar
1/4 cup raisins
Salt and ground black pepper
1 boneless beef chuck roast (about 2 pounds)


DIRECTIONS:

1. In 4 1/2- to 6-quart slow-cooker bowl, combine gingersnap crumbs, carrots, celery, onion, wine, vinegar, raisins, 1 teaspoon salt, and 1/2 teaspoon pepper. Place roast on top of vegetables. Cover slow cooker with lid and cook as manufacturer directs on low setting 8 to 10 hours or on high setting 6 to 6 1/2 hours or until roast is very tender.

2. Place roast on warm platter. Skim and discard fat from cooking liquid. Serve roast with vegetables and sauce.
